There is a wide selection of Korean dishes, both kitchen-prepared and those that the waiter or diner grills at the table. The meal starts with the delivery of pickled vegetables, fermented beans and jellied concoctions to nibble alone or as accompaniments with ordered dishes. Start with bo soet salad, a mix of mushrooms and pine nuts in creamy walnut and sesame oil dressing. Seaweed salad offers an aromatic experience, while du boo jeon, pan-fried bean curd, is sweet and nutty. A speciality is chap chae, fried vegetable gelatin threads with beef, chicken or pork. Barbecue items include meat and seafood marinated in sweetened soysauce and sesame oil. Beef short ribs are particularly flavourful. Do try the classic rice dish dol sot bi bim bob, which the waiter mixes piping hot at your table. For dessert, sample Korean rice cake or, to cleanse the palate, sik hae, a sweet fermented rice and ginger drink served ice cold.
