A choice between a smart, but slightly generic hotel restaurant, or seating beside the pool. A display of cured meats permeates the indoor area with its heady aromas.

Hotel Italian restaurants often play it safe, but Vivaldi strikes a balance between traditional favourites and innovative creations. Antipastiperks up the appetite with a judicious selection of salami, ham and perfectly cooked shellfish. Minestrone is another old reliable, but here it is enhanced with the unexpected presence of rock lobster. Cheese lovers will be tempted by twin mousses of mascarpone and gorgonzola, wrapped in parmesan crust. Spaghetti with black truffle adds a luxurious twist to good, honest pasta; saffron risotto is rich with taleggio cheese, but perhaps a tiny bit too soft. Wagyu steak and goldband snapper are among the pick of the mains, the latter served with perfectly cooked spinach - a trick that's harder to pull off than it looks, if some offerings are to be believed. tiramisu inevitably props up the dessert list, but sabayon with citrus sorbet and meringue offers a light ending that you may not find elsewhere in town.
